Chicken and Bacon Pancake Recipe

Ingredients
1 chicken thigh, debone
2 slices of bacon
1 egg
2 tbsp coconut oil
Seasoning
¼ tsp salt
1/8 tsp ground black pepper
How to Prepare
1. Cut chicken into bite-size pieces, place them in a food processor, add bacon, egg, salt, and black pepper and process until well combined.
2. Take a frying pan, place it over medium heat, add 1 tbsp oil and when hot, scoop chicken mixture in the pan, shape each scoop into a round pancake and cook for 4 minutes per side until brown and cooked.
3. When done, transfer pancakes into a plate, drizzle with remaining oil, and serve.
